This coffee comes from the Chelchele washing station, located in the village of the same name, in the heart of the Kochere district in the Yirgacheffe region. As is often the case in Ethiopia, the coffee is grown by numerous small-scale farmers on very small plots, using subsistence farming and mixed cropping.

The farmers deliver their ripe cherries to the Chelchele washing station, where this lot undergoes a special processing method (Special Prep). The cherries are rigorously sorted—approximately 90% are perfectly ripe—and then processed separately from other lots to ensure optimal quality.

After pulping on the day of harvest, the coffee ferments for 8 to 12 hours before being washed and then dried on African beds for 5 to 15 days, depending on weather conditions. This attention to detail at every stage results in a Grade 1 rating, reflecting a particularly meticulous preparation process.

In the cup, this washed Yirgacheffe offers a delicate, floral profile: jasmine, almond, and yellow peach. The cupping profile reveals a subtle, fruity sweetness and a juicy, balanced acidity.
