"Meuf" is the first café in a long line designed to highlight the work of women in the café.
The first in this collection is a rare coffee produced by Cynthia Morales in the heights of Mosonte, in the Dipilto region of Nicaragua . This specialty coffee is grown on a small family farm that peaks at 1,600 meters above sea level, giving its beans a refined acidity and an aromatic profile rich in fruity notes. The farm, named Las tres hermanas in homage to the three Morales sisters, is a symbol of the commitment and resilience of women in coffee cultivation.
This lot is composed exclusively of the Bourbon Tekesic variety, an old and rare lineage of the Bourbon variety, developed in the 50s-60s in El Salvador by careful selection for its unique taste characteristics. Although not very resistant, this variety offers an exceptional cup profile. The harvesting process is carefully executed, and Cynthia ensures a rigorous selection of the ripest cherries. The processing is done using a washed method, to preserve the purity and authenticity of the terroir. After washing, the beans are taken to the Bridazul station, where they dry delicately on African beds, thus guaranteeing uniformity and optimal stability in the cup.
Cynthia Morales , passionate about agriculture and coffee, is a dedicated producer in the Dipilto region. Having inherited her father’s farm, she has taken on the challenge of maintaining the quality and family legacy. In addition to her production, she shares her expertise as a trainer at the Dipilto National Coffee School, a government-supported project. With her extensive knowledge of quality and processing, she has become a central figure in the Dipilto coffee community, helping to promote a new generation of producers.
