This coffee, grown by Jairo Arcila at the Santa Mónica farm, is a 100% Pacamara microlot, a variety created in El Salvador from the cross between Pacas and Maragogipe. Although this variety is low-yielding, it offers an exceptional cup profile. The harvest is done in several stages to select only the ripest cherries. These are hand-sorted and submerged for 30 hours for underwater fermentation. After pulping, the beans are gently washed and dried under temperature control until they reach perfect humidity.

Jairo Arcila is a third-generation coffee farmer from Quindio, Colombia. He is married to Luz Helena Salazar and they have two children, Carlos and Felipe Arcila, co-founders of Cofinet. Jairo’s first job was with Colombia’s second largest exporter, where he worked as a mill manager for over 40 years until his retirement in 2019. In 1987, Jairo purchased his first coffee farm, Finca La Esmeralda, where he planted his first batch of Caturra. In addition to his full-time job, he was fortunate to be able to earn money from coffee production on his farm.

With his savings, Jairo gradually acquired five more farms: after Esmeralda, he bought Villarazo, Mazatlan, Santa Monica, Maracay and Buenos Aires. During the harvest period, Jairo offers many jobs to locals, which has a significant economic impact on the local community.

Jairo has benefited from the wise guidance of his sons, who are now experts in the production of specialty coffees. With their help, Jairo has greatly improved the picking, sorting and processing of his coffees. They have also guided him in the production of exotic varieties. He now grows varieties like Pink Bourbon, Java, Papayo and Gesha on all of his farms. The support of his sons has given Jairo the tools to produce exceptional coffees with incredible flavor profiles.

In addition to coffee, Jairo grows other agricultural products on his farms, such as tangerines, oranges, plantains and bananas. Jairo likes to start the day with a good breakfast, but what he enjoys most of all is spending time with his family.
