As is often the case in Ethiopia, the coffee is grown by numerous small-scale farmers on very small plots, using subsistence farming and mixed cropping.\u003c\/p\u003e\n\u003cp\u003eThe farmers deliver their ripe cherries to the Chelchele washing station, where this lot undergoes a special processing method (Special Prep). The cherries are rigorously sorted—approximately 90% are perfectly ripe—and then processed separately from other lots to ensure optimal quality.\u003c\/p\u003e\n\u003cp\u003eAfter pulping on the day of harvest, the coffee ferments for 8 to 12 hours before being washed and then dried on African beds for 5 to 15 days, depending on weather conditions. This attention to detail at every stage results in a Grade 1 rating, reflecting a particularly meticulous preparation process.\u003c\/p\u003e\n\u003cp\u003eIn the cup, this washed Yirgacheffe offers a delicate, floral profile: jasmine, almond, and yellow peach.
